Background In recent years, plant-based diets have exploded in popularity. Because of this, numerous research companies have shifted research efforts toward developing plant-based meat substitutes. Food scientists at these companies work to develop and refine their products to better mimic meat by conducting experiments on flavor, color, appearance, texture, nutritional quality, and aroma. For example, a food scientist may spend her days developing or modifying pigments derived from vegan sources to replicate the appearance of an animal meat product. Another food scientist may be comparing the nutritional profiles of several product prototypes. With every experiment, these food scientists are using science and the scientific method.
