This provided them a faster transportation for there meat and other products that would spoil if not eaten or used quickly, or it would allow the to transport cattle around the country without worrying about loosing one or to animals. The railroads would move the meat or cattle across the country, up and down, side to side and left and right. So the ranchers wouldn't have to worry about there meat being wasted or no being sold at all. The railroad system would benefit them a system to sell and trade around the country.
Hope I helped. :)
