Problem Statement:
Farmers normally lose their income by selling live animals and raw meat. It is brought to your attention to research how farmers can improve their income by processing and adding value to their farm produce. By selling final, well-processed products, farmers will enjoy the fruits of their hard work. Processing and value-adding help farmers realize what they are losing and gain much more profit than their old way of doing business.
Research Questions:
1. Visit an abattoir and research the steps of slaughtering either cattle or sheep. Focus on the following:
a) Handling of animals in the abattoir
b) Slaughtering/killing of animals in the abattoir
c) Cleanliness and hygiene
d) Draw and label or paste all the carcass cuts of the animal you research as recommended by the South African Meat Industry
e) Handling of the carcass
2. Research the process involved in making the following meat products:
a) Mince Meat
b) Boerewors
c) Russian
d) Steak
e) Biltong
3. Discuss the role that air plays in the packing of meat.
4. Why is it important that all beef/sheep animals should be slaughtered at an accredited abattoir?
5. What can cause meat/carcass contamination?
6. Good presentation of this assessment attracts marks for:
- Time management and adhering to a time log sheet
- Neatness and a nice cover page
- Table of contents and page numbering
