To be fickle, as the question states, is to be quick to change your mind. In This excerpt, Elaine and Mrs. Pringle are having a conversation about Oliver Farnsworth.
At the beginning and throughout their conversation, Elaine seems to have a positive opinion about Oliver, complimenting his kindness. Mrs. Pringle responds in agreement, stating that she always considered him to be "the most considerate of men".
Her opinion however changes. While it seems that Mrs. Pringle originally wanted Elaine to find interest in Oliver, she backtracks on her recognition of his kindness and tells Elaine to find interest in the Prince instead. She quickly changed her mind about Oliver and Elaine being a couple and now wants Elaine and the Prince to be a couple.
